Most of you know me as a style and lifestyle blogger, but behind the scenes I am also a wife and busy mom of two children who are always on the go. While neither is a super picky eater they definitely have their personal preferences and we all love a well rounded dinner, as this is often times the only part of the day that we are all together. We usually steer clear of red meat and we were all getting a little tired of chicken and pork and were ready for something new, that the whole family would enjoy. That is why I was so happy to discover Bumble Bee SuperFresh. Bumble Bee SuperFresh is a line of naturally-seasoned, restaurant quality “fish-forward” prepared seafood solutions for the home. It raises the bar for what sea food lovers can expect from frozen food! I selected the Tilapia with lemon, pepper and herbs and was pleasantly surprised that those were the exact listed ingredients…nothing else.
I added a fancy appetizer of ancient grains crackers topped with tapenade and side dishes of roasted carrots and mini quinoa patties and the entire meal took less than 25 minutes to prepare and was out of this world good!
First, I prepared the appetizer (I used jarred tapenade from the grocery storr; usually found near the olives in the deli area).
Then, I emptied a bag of baby carrots on to an edged cookie sheet, drizzled with olive oil and seasoned with salt, pepper, garlic, thyme and paprika. You could also add cumin, rosemary, oregano…really whatever you’re in the mood for or have on hand. I then placed the cookie sheet in an oven pre-heated to 425 degrees and roasted for 20 minutes.
After the carrots were in the oven I removed the fish, placed the pre-seasoned filets in their included parchment packet and put them in the pre-heated oven, also at 425 degrees. (I own a double oven, but you could just as easily put them in a single oven side by side.)
While the carrots roasted and the fish baked, I prepared the mini quinoa patties.
2 c quinoa (room temperature)
4 large eggs, beaten
1/2 t sea salt
1/3 c finely chopped fresh chives
1/2 onion, finely chopped
1/3 c freshly grated parmesan cheese
3 cloves garlic, finely chopped
1 c whole grain bread crumbs
1 T extra virgin olive oil
Combine the quinoa, eggs and salt in a medium bowl. Stir in the chives, onion, cheese and garlic. Add the bread crumbs, stir and let stand for a minute. Form mixture into twelve 1-inch thick patties. (add water if mixture is too dry and more bread crumbs if too wet) Mixture can be kept covered in the refrigerator for up to 2 days.
Heat oil in a large skillet over medium-low heat. Working in batches, add patties, cover and cook until bottoms are deeply browned (about 7 minutes). Flip with a spatula and cook the other side until golden. Remove from skillet and cool. Repeat with remaining patties.
By now the fish and carrots should be ready and all that’s left is to prepare your plates!
